Let’s be honest, it’s hard to believe that there is such a thing as “healthy baking”. The claims on the internet are endless for sugar/gluten/dairy-free “delicious” sweets that only end up in the bin after you’ve invested not only time and expensive ingredients, but also all your hopes and dreams for a low calorie indulgence.
Trust me, I have tried them all: vegan cheesecakes, avocado brownies, oatmeal muffins, you name it! They all looked the part but left me disappointed and unsatisfied. So when I saw Amy‘s recipe while browsing for truffle recipes, you can imagine that I was more than skeptical to the idea of ‘healthy’ truffles… Yet I thought, chocolate and orange in the same sentence? That must be at least worth a try…
They turned out better than worth a try; they were absolutely delicious! No butter, no cream, no sugar! Just natural ingredients that came beautifully together.
Time
5 minutes + 15 minutes for chilling
Ingredients
(makes 13 truffles)
- 85g cocoa powder (I used organic, pure, unsweetened)
- 1 tbsp Orange zest (from a big orange)
- 60ml freshly squeezed orange juice
- 3 tbsp clear honey
Method
- In a medium size bowl, sift the cocoa powder and mix with the orange zest.
- Form a well in the mixture and add the orange juice and the honey.
- Mix well until the mixture forms a ball. If you feel the mixture is too dry, gradually add 1 tsp of orange juice at a time until your mixture is damp enough.
- Let it rest in the fridge for at least 15 minutes.
- With the help of a tsp, form 13 small balls with the palm of your hand and lay on a tray. Put your truffles in a box and keep them in the fridge until it is time to serve them.
